Boston (CBS) — A futuristic farm in Boston hopes to take advantage of emerging industries by bringing the farm inside. Boston Microgreens specializes in growing vegetables that are basically baby vegetables.
Microgreens are plants that are harvested above the soil line after the first small leaves have sprouted. Compared with their “ripe” counterparts, they have a higher concentration of nutrition and flavor.

It all started in the apartment of co-founder Oliver Homberg.
The Northeastern University graduate said that the pandemic forced them to be creative.
“When the pandemic started, we were mainly restaurant-oriented, so when these restaurants started closing, our orders dropped from 100 to 0 in about a week-it’s really sad, but the whole world It’s crashing, so we didn’t really think of it as an individual. But what we did was set up a CSA program,” Homberg said.

“We call it a nutrient combination. It combines all these different micro-vegetables: kale, cabbage, broccoli, pea sprouts, sunflower, beets, Swiss chard and buckwheat. You not only get concentrated nutrients, vitamins and Minerals, and you get a variety of plants from all these different plants, so in each bowl, you basically get the entire front garden.”
Homberg says it can be used in smoothies, salads, or just as a side dish.
Boston Microgreens’ 2,000-foot factory in South Boston has been used up. There are 11 planting racks and everything is planted to order.
“We have two harvest days a week, and everything on the farm has already been purchased or ordered by customers. This is how we can produce large amounts of food and make our’in-city’ business viable,” Homberg said.
The urban farm has been up and running for four years.

Holmberg said the focus shifted to expanding operations and establishing a network of sister farms. One of them is planned to open in Beverly.
